Sauce
- 2 table spoons chopped ginger
- 2 table spoons sliced lemon grass
- 1 cup of red capsicum (green is fine, I just love bright red colour)
- 1 cup green shallots - chop or slice its up to you
- 2 cloves of garlic, chopped finely
- 1 1/2 table spoons sliced coconut sugar
- 1 table spoons of sesame oil
- 2 table spoons of Tamari or light soy sauce
- 3 table spoons of rice wine vinegar
- Black pepper
- 1 large frying pan and 1 table spoon of olive oil
Instructions
- Heat up the oil in a medium heat and fry ginger, garlic and lemon grass for one minute or so.
- Add the capsicum,coconut sugar and shallots and fry for another minute then add the snapper fillet. If you are using a frozen one like me, make sure you drain and pat dry the snapper with clean tea towel or paper towel before you are putting them in the frying pan. Cover and flip after 5 minutes.
- In a small bowl mix well the sesame oil, soy sauce and the rice vinegar then pour over the snapper fillets, try to spread them evenly then add some black pepper. Cook for further 5 minutes.
- Serve with Jasmine Rice, chopped chilli and Sliced Cucumber.
